10 Meals for $10 Each

For families on a budget, making interesting meals that are quick, easy, and inexpensive can be tricky. KCFM readers shared with us 10 meals they whip up for their families that cost around $10 each.

Diane Favrow, mother of five, serves these two dishes. And when her kids were little, one trick she did to encourage her kids to eat was making a fish-stick man with ketchup for his head.

Chicken, Rice & Vegetable
4 boneless chicken breasts
1 cup white rice
1 can (10 ¾ oz.) cream style soup
1 ¹/³ cup water
Salt & pepper to taste
2 cans green beans
1 tablespoon butter

Combine rice, water, soup, salt and pepper in 4 qt. casserole dish. Remove skin from chicken breasts and place in casserole dish with rice mixture. Place in oven at 375 degrees for 45 minutes. Heat green beans in a pan with butter approximately fifteen minutes prior to chicken being done.

Green Bean Casserole (with ham or poultry)

1 lb thick sliced ham, turkey or chicken
2 cans green beans
1¹/³ cup French's Fried Onions
1 can (10 ¾ oz.) cream style soup
½ cup milk
Salt & pepper to taste
Boxed flavored rice mix

Place slices of ham or poultry in the bottom of 4 quart casserole dish. Drain green beans and mix with soup, 2/3 cup fried onions, milk, salt & pepper in bowl. Pour in casserole dish and bake at 350 degrees for 20-25 minutes. Sprinkle with remaining fried onion and bake another 5 minutes. Serve with the family's favorite flavor rice mix (Rice A Roni or store brand).

Cori Reiswig, mother of four boys, says she can't really call this meal a recipe because it's all pre-packaged ingredients, but likes it because it's quick and her kids love it.

Lazy Mom/Cheater Taco Salad

1 package taco salad mix
½ lb grilled chicken, chopped or diced
1 can corn
1 can black beans
Mix all ingredients. Serve with tortilla chips.

Sarah Keller, mother of one, submitted these three tried and true recipes she makes for her family.

Hawaiian Haystacks

1 lb chicken
4 cans cream of chicken soup
1 can chicken broth
1 can pineapple chunks
1 ½ cups rice
3 cups water
½ teaspoon salt
¹/³ cup Chinese noodles

Combine chicken, soup, broth and heat together. In a separate pan, cook the rice, water, and salt. Pour chicken mixture over rice. Top with Chinese noodles and pineapple chunks.

Apricot Chicken

1 lb chicken
1 package Lipton Onion Soup Mix
1 cup Russian dressing
1 cup apricot jam
1 ½ cups rice
3 cups water
½ teaspoon salt

Mix the chicken, onion soup, Russian dressing, and jam together in a pan. Cook for 45-60 minutes at 350 degrees. In a separate pan, cook the rice, water, and salt. Serve when done.

Ham with Pineapple

4 ham steaks
1 can sliced pineapple
¼ cup brown sugar
½ teaspoon mustard

Combine brown sugar, mustard, and pineapple juice as needed to make glaze. Pour over ham. Dot with sliced pineapples and cherries. Bake for 20-25 minutes at 350 degrees.

Renee Christensen, has found her five children enjoy these three meals. She says the Chicken Wraps are especially popular in the summertime.

Italian Cream Cheese Chicken

1 lb chicken breast or thigh cut up
1 package 8 oz cream cheese
1 small bottle generic Italian dressing
Combine all ingredients in crock pot and cook for 2 hours on high or until chicken is done. Serve over cooked noodles.

Chicken Wraps

1 lb cut up cooked chicken breast.
1 bag of pre-mixed salad
1 small bag of Frito corn chips
1 bag of flour tortillas
Ranch dressing and BBQ sauce mixed 1:1 ratio
Combine first three ingredients and toss. Add dressing to taste. Roll up in tortilla shells and enjoy.

Beef Stroganoff

1 lb ground beef
1 can cream of mushroom soup
1 cup of sour cream
1 can of mushrooms 
1 bag of egg noodles
1 bag of pre-mixed greens
1 tomato
1 cucumber

Cook ground beef until done. Drain fat off and add soup and mushrooms and cook until hot. Cook noodles and drain. Add sour cream to meat and soup mixture just before serving and mix thoroughly. Serve over noodles.

Janna Hart, mother of four, submitted the following recipe, and says she tries to make dinners for her family that are both interesting and convenient.

Chicken Fajitas

4-6 chicken breasts (boneless, skinless, frozen)
3 peppers, sliced
1 medium-large onion sliced
1 package Lawry's fajita seasoning
1-2 packages flour tortillas
Sour cream
Shredded cheddar cheese (or cheese of your choice)
Other favorite toppings

Place frozen chicken and onion in crock pot. Pour fajita seasoning packet over chicken (you might need two packets depending on the size and of your chicken). Add water as directed on packet. Cook on High for six hours. Stir occasion-ally to help the chicken shred. The last hour, add sliced peppers, and give it one more stir to mix it all together. Place chicken on tortillas and add your favorite toppings. Eat and enjoy!
