Deep-Fried Chicken Wings and Legs In Beer Batter

Makes 4 servings

For the batter:
  • 1 cup flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 medium egg, beaten
  • 10 ounces of beer, IPA-style
  • Pepper
  • Salt


For the chicken:

  • 4 whole chicken wings
  • 4 chicken drumsticks
  • 3/4 cup cornstarch
  • 8 cups vegetable oil, for deep-frying
  1. For the batter: Sift the flour, garlic powder, paprika, salt, and pepper into a large mixing bowl.
  2. Whisk in the egg and enough beer to make a thick batter, taking care not to over-mix.
  3. For the chicken: Heat the oil in a deep, heavy-based saucepan to 320 F on a thermometer.
  4. Pat the chicken pieces dry and then dust in the cornstarch. Dip in the batter to coat.
  5. Deep-fry the chicken, in batches, for 14 to 18 minutes until golden, crisp, and cooked through (the wings will need less time than the drumsticks).
  6. Drain on paper towels and serve hot.
